On The Eve Of Veganism(ish)

I’ll admit, I’m nervous, yet resolute this is the right choice in this season. I’m certainly ending my carnivorous days with a bang, tonight’s dinner included roast chicken albeit with avocado, cauliflower and cut up papaya, lunch was all together less salubrious (Japanese noodles with beef, bean sprouts and spinach dip mixed in, with blueberries on the side!) but both meals were easy. I think what I’m most apprehensive about is the lack of ease I may find on this endevor, yet I feel exceptionally uncomfortable by “our” (and when I say “our”, I mean “my”) expectation that life and food should be easy. Massive corporations, the media and society in general tell us we should be able to eat on the go, to live in a society of convenience, to push a button and see an immediate outcome. Yet some things are worth our time and effort and perhaps, what I most want to gain from this, is the ability to prioritize the most important things to me, to be the change I want to see in the world, to stop being a sheep and instead take the time to learn to be a shepherd.

So my menu plan for the week as I ease into veganism is:

Breakfasts

  • Papaya and blueberry salad with almonds and seeds x 2
  • Apple slices with almond butter and smoothie x 2
  • Breakfast lentil patties with pear slices and orange juice
  • Fasting

Lunch

  • Chickpea salad, spinach, tomatoes, seed mix
  • Green bean and aubergine salad with peanut butter dressing
  • Carrot and lentil soup, cut up apple slices with almond butter
  • Lentil dahl, beetroot salad with spinach and mandarin oranges x 2
  • Work lunch
  • Fasting

Dinner

  • BBQ style tofu, indian potatoes, carrots, spinach salad
  • Brown rice with tahini, lentil dahl, veggies
  • Sweet potato with cranberries, seeds, spinach, almonds, avocado
  • Smoothie and salad
  • Leftovers
  • Out at a dinner party {thankfully they’ve been very understanding}
  • Fasting

Honestly, I think writing this post has actually made me more nervous! ;-)

    I am so excited to read about this new challenge! I will try it in January for the month myself!
    I really like your reasoning for trying veganism it is something I struggle with too.

    I’ve been thinking the same thoughts as I grocery shop admist boxes and boxes of rice a roni, boxes and boxes of cereals, etc. Keep publishing your menu…it is giving me ideas for my menu planning.

    If you have it in your budget (or at your library), I highly recommend Mark Bittman’s How to Cook Everything Vegetarian. Yes, it’s vegetarian, not vegan, but a huge number of the dishes are (or can be made) vegan. I love it!

    I agree on the book of Mark Bittman. He gives, if possible, suggestions how to change a vegetarian dish into a vegan dish.
    I’m dealing with the problem that we, in the netherlands, eat quite differently regarding our surrounding countries. That makes it sometimes harder to use a book as the book of Mark Bittman.
