What are you eating this week?

Today is veg sweet+sour with egg fried rice (I WILL learn how to make it well!!), tomorrow bbq at a friends, then lasagne (from the freezer), quesadillas (w/ veggies and homemade refried beans), and either spaghetti+meatballs or lentil loaf, depending how much energy i have for cooking that night. Then it’s time for a big shop!! Apart from a few veggies, bread, milk and margarine (and er, a tub of icecream!) we’ve not done any shopping in two weeks and have kept within budget this month, yay!! I’m hoping we can keep up with menu planning and shopping to a list next month, as it’s made such a difference!
The question is, why are you posting and not DIGGING?!
I’m waiting for my paperwork and invite for orientation! I’m hoping to have it soon…I may write another email!
So glad menu planning and shopping is working for you!
It all looks wonderful. I don’t have a good sense of what money is worth in the UK, but you seem to be getting a LOT of healthy food for your money. I belong to a CSA farm and got my first spring share yesterday, lots of green onions, new lettuces, bok choys and lots of Russian kale which I just love. Fresh from an organic farm it’s wonderful to eat uncooked……..I’ve been babysitting my 5 year old grandson for more than a week now (next Thursday is the last day) and coming home really really tired and not getting much done, so today is clean and organize the kitchen. Plus deal with the chaos of my arts and crafts corner which I began reorganizing and had to just leave in such a daunting mess! I’m meditating and working on not being overwhelmed and just taking baby steps toward my goal…Meanwhile, the yard is filled with every sort of tree and bush in bloom and flowers are beginning and leaves are in that sweet early stage when they are so fresh and green. I’ll have to leave some time to go out and rejoice in the world….
Looks like some yummy food there! I have nothing planned for this week yet! Eek! I seem to be flying by the seat of my pants lately… we do have lots of food in the house, so I really should just make my plan and get it done with! I do know tonight the girls and I will have Brocolli/Cauliflower Soup & Grilled cheese, while hubby & son will have hamburgers.
I am too tired right now to have a menu planned for the week. I go through stages where I do plan and others where I don’t. But this past week I stocked up on chicken (drumsticks and thighs) and so there are many different ways to prepare. I also have a great selection of green and other veggies and some staples like potatoes and brown rice. I do need to get some milk or milk substitute for my cereals (hot and cold). Since I ran out a few days ago I find I’m not eating breakfast. This just makes my entire eating scheme a mess and I find I don’t make good food choices when I don’t start off with the breakfast.
Mmm…I love rice milk!
We just had broiled steak and homemade chili sweet potato fries for tonight’s quick dinner.
I also bought that Soreen Only £1 malt loaf <3 I love the stuff! I also get the organic yoghurt – though I need some flavour, so I go for Vanilla.
I bought so many cartons of fruit juice too; but that's somewhat healthy =)
This week I'll be pressed for time, so more likely pasta with boiled veg most nights. Planning to eat more rice once my timetables a little looser =)
Thanks for sharing – those are some great ideas.
This week will include fridge meals. For the girls I am going to make a chicken Wellington type of thing. There is a soup that is packed with veg and chick peas already in the fridge. I also have a clear chicken broth for some lunches. I will be making a mac and cheese to use up some left over noodles. When the fridge is looking a little less stuffed I will do a roast chicken and make some pasta sauce. If that doesn’t feed everyone a fish pie will be in the offing too.
We had a pre formal (a function for the kids in the last year of school that includes a formal meal etc) party here on Friday night and I have blown the budget so economising will be happening as we play catch up.
Do you know for the first time EVER I’ve actually planned out a week’s menu?! Just the evening meals. Can’t believe I’ve never done it before but I need to be way more organised, that’s why we always end up eating crap. So!
Sat night: Carbonara
Sun night: Spinach & Ricotta chicken lasagne (MAN that was good!)
Mon night: Fish pie (I even made the mash for the top this morning before work. See? Organised)
Tues night: Oven baked mushroom & pancetta risotto
Weds night: Out for tea
Thurs night: Out for tea
Fri night: Prawn Noodle Broth.
Ok. So I’m not actually in 2 of the nights but still, I think that’s progress!! Hoping to try and do it every week now. (Ha, bet it falls by the wayside after a few weeks!)
