Slow Cooker Saves The Day

I’m currently in a season of life where making meals is a bit of a larger endeavor! Four adults, with one working man to feed each day, is throwing the food budget into disarray! On top of that, I’m utterly exhausted and last night I could feel I was slipping away from the simple life! Alas, I decided the best way to reign myself in was to get the slow cooker out! I so enjoyed making dinner last night (a blessing in itself) that I’ve decided to try to use the slow cooker at least once a week (Wednesdays) if not more. I thought you might be interested in the recipe (which I have to say basically came together through a bit of trial and error):

Simple Slow Cooker White Wine Chicken

INGREDIENTS
1 tablespoon olive oil
3-4 chicken breasts cut up into small pieces (I used 3 small chicken breast to feed four people)
2 large onions (I used 1 red, 1 brown)
4 medium to large potatoes (I chopped each potato into 8 pieces/chunks!)
3 large chopped carrots
1/3 cup lemon juice
3 cups chicken stock
1 cup dry white wine
2 tablespoons garlic seasoning or around 2 garlic cloves crushed
3 tablespoons parsley
2 tablespoons fresh thyme leaves

I browned the chicken and onions with the olive oil for about 5 minutes in a frying pan. I then placed browned onions & chicken plus all other ingredients in the slow cooker! I added in a cup of peas for the last hour! The meal took about 3.5 ish hrs to cook on high but I know slow cookers really vary! I served it over a bed of jasmine rice with crumpled feta cheese and olives on top :) (note: 30 minutes before serving I did add in about 2 tablespoons of single cream to thicken)

It was absolutely d.e.l.i.c.i.o.u.s!

    Looks delicious too. I’ve just resurrected my slow cooker this week to make a pot of lentil stew. Lentils, garlic, celery, carrot and salt and water. Absolutely, nearly!, as good as my mother’s. Just missing the fried dumplings which I shouldn’t eat anyway. Cherrie

    Yay for slow cookers! I love my slow cooker :) Soups, stews and baked beans are so easy to make – just a couple of minutes of preperation and leave it to its own devices! What could be simpler?

  4. I love my slow cooker. It really does save the day quite often! I even use mine to cook dried beans–beats having to keep an eye on them while they simmer on a stovetop.

    Love my slow cooker too. Just cooked a roast and then beef stew this weekend in it. I need to find more recipes that my family will actually eat. We are all pretty picky eaters.

    Slow cookers are such a huge time and energy saver. Your meal sounds delicious. Last year I tried a slow cooker lasagna that was delicious.

    I love my slow cooker. Today its going to be hot, so I have decided that a slow cooked silverside, that we can eat cold, will be todays dinner.
    with the cooker on slow it wont heat the house up and I wont be in a hot kitchen trying to feed everyone.
