Weekend Winter Warmer Soup

This soup is just perfect for a weekend, I make a batch on a Friday and enjoy with salad and warm rolls all weekend long! Because it has mince in it, it is very hearty and wholesome and just marvelous!

  • 1 lb hamburger
  • Onion chopped
  • Celery (2-3 stalks)
  • A green pepper

Saute for 5 minutes until meat looks brown and veg are soft

Add

  • 2 tsp salt
  • 2 tbsp sugar
  • 1/4 tsp pepper
  • 1/2 tsp paprika
  • 28 oz can tomatoes
  • 2-5 oz tomato paste (optional)
  • 4 cups hot water
  • 2 beef cubes
  • 2-4 chilis (depending on how hot you like things)
  • 3 tbsp parsley
  • 2 cups cut up bite size potatoes
  • 1 cup of cut up bite size carrots

Simmer for one hour, take out chili, add 6-7 cups cut up cabbage

Cook (simmer) for approx another hour until liquid has reduced and veggies soft!

You will enjoy and savor all weekend long….! :)

    I love soup! We’ve been eating all kinds of hearty soups with sourdough bread as a side. You just can’t beat it for a warming comforting meal during these deary winter days!

    I make almost the same quite often…and my mother before me. I use V8 juice as the liquid sometimes. And in addition to the vegetables you mentioned, I add whatever veg might be languishing in my freezer…corn…green beans…

    I think it’s time to put a pot on very soon!
