Sultana, Bran & Orange Loaf

I found this recipe inserted into an old recipe book I bought at a charity shop! I’ve made it a few times and it has been a roaring success!

Ingredients

  • 125g (4oz) bran (as in bran flakes cereal)
  • 125g (4oz) sultanas
  • 300 ml (1/2 pint) semi skimmed milk
  • freshly grated rind and juice of 1 orange (I peel then cut the rind to make it larger and make the loaf look colourful)
  • 50g (2oz) chopped walnuts
  • 125g (4oz) soft brown sugar
  • 125g (4oz) self-raising wholemeal flour

Method

Place bran, sultanas, milk, ring & juice into a large mixing bowl.  Leave to soak for 2 hours. Add the rest of the ingredients and mix well. Spoon into a greased lined 900g (2lb) loaf tin and place in centre of pre-heated over (190 C, 275 F, Gas mark 5) for 45-55 minutes. Leave to cool and serve sliced with butter!  The loaf can be cut into 8 slices!

I find this a great small meal when served with cheese & veggie sticks, or it is perfect for afternoon tea served with a cup of tea!

    Oh my goodness, I just read your message about featuring my blog! I’ve been travelling so just now got unto a real computer (as opposed to my cellphone). Are you sure you want to pick mine – its even more random than usual these days :P

    Are Sultanas raisins? I ask because I am not in England. It sounds delicious. Anyone know if I can substitute Whole Wheat Flour and yeast for self rising wholemeal flour (I don’t know what that is).
