Yesterday afternoon I decided to get a plan together to make some meal for freezing as well as some breads & baked goods. I started late afternoon and finished quite late in the evening. Here’s what I made

I started off putting apples, lemon juice & cinnamon into a slow cooker to make apple sauce!

Then I made pepper & apple meatballs with fruity sauce

made with tomatoes, onion, courgettes (zucchini) & I added in plums!

Next, the cheesy nutty biscuits! Yummy!

Followed by orange, sultana & bran loaf!

I enjoyed making my mum’s garlic & cheesy chicken fingers!

Next was the kale & potato bake topped with cheese – wow, it was absolutely fabulous I wish I had remembered to take a picture of the finished product, it was met with a lot of ooohs and aaahs!
I finished off making a large batch of peanut butter cookies! And today I’m going to be making another orange & sultana loaf which I’ll give to my mum and a big batch of aztec soup!
I’ll now have:
- 6 meals of meatballs (would only need to add veggies)
- 3 meal of garlic & cheese chicken strips (would need to add veggies)
- 3 meal of aztec soup
- 30 cheesy nutty biscuits
- 30 peanut butter cookies
- 2 orange & sultana bran loaf
- 8 meals of potato & kale bake (would only need to add veggies)
- 4 portions of apple sauce for yummy healthy snacks!
My meatballs came to £0.40 pence per serving, my chicken strips £0.70 per serving and kale & potato bake (with carrots, onion & cheese) approx £0.30 per serving. Last night I had my homemade meatballs, potato & kale bake with veggies and the whole meal came to £1. Amazing!
My feet hurt, but I got a lot accomplished and it feels really good knowing on the busy days or when I have unexpected visitors I have healthy, frugal meals and treats waiting to be put to use!
And now I’m off to watch my James Martin on Saturday Kitchen, followed by Adoption Stories on Discovery Health and Home here in England (for those who are interested it is on at 11 and 11:30 and 12 and 12:30 on Discovery Health and Home plus 1). Then I’m going to hand deliver some baked good to people and go for a long hike before dinner and the Time Traveler’s Wife with friends!

Do you make british style chunky bramley apple sauce or the american type? I ask as I often see vegan recipes using applesauce to replace oil/fat, and they look like they would be a lot healthier, but I know they’re using american style apple sauce – if you make that kind, how??

Everything looks super! I won’t be baking much today as it’s H-O-T outside, but it does give me ideas!

sounds like you have a wonderful weekend ahead of you! i spent last night doing all my food shopping and watching a movie. today, i went to the farmer’s market, cooked up roasted potatoes with dill and onion and a loaf of cornbread, cleaned house, blogged, and knitted. i’m going to make a soup tonight and have most of my sunday to myself tomorrow to do as i please. isn’t it wonderful to cook, despite the long hours it sometimes takes? soooo rewarding. i love having food at hand, too. someday soon i’m going to bake for the fire departments around here.
