Sorry for the quietness yesterday, most of the evening was spent without electricity so posting was impossible. However, it was a great day!
Food:
Breakfast: Homemade whole wheat bread with crunchy organic peanut butter, 1/2 a 0% fage yogurt with flax seeds, 3 organic strawberries & 8 black grapes. I enjoyed this with a glass of lemon & ginger tea.

Lunch: Sandwich – spinach, rocket, emmental cheese, russian mustard, my wonderful lentil kitchen sink soup, 3 olives & grapes

Dinner: Ricotta cheese & spinach pizza with a salad made with carrots, grapes, cherry tomatoes, rocket & feta cheese!

I have to say I didn’t like the pizza, so pretty much had the salad with only a couple of bites!
Exercise:
AM – Swim 45 minutes
PM – Hike 1 hour
Get Stuff Done: I spent over an hour trying to get the bill sorted with BT with no such luck! Grr!
So how are all you lovelies doing?
Remember to see Day 1′s post to see all the other participants!
I have to say I am finding this such a great way to encourage and motivate myself! I don’t believe in depriving myself of anything, in fact right now I’m eating one of my raw peanut butter cookies, but I’m moving, I’m thinking about exercise, I’m making sure I get protein & fruits & veg etc and I’m conscientiously planning my meals! To me that is what healthy eating is all about! Balance.

FT – Thanks for that explanation re Yorkshire pudding.
Breakfast – same as yesterday.
Lunch – leftover rice/vegie dish from last night.
Dinner – Home made vegie and lentil soup, with some multi grain toast.
Snacks – grapes, pear, apple muffin (will be eating these for a few weeks) and a few pieces of pineapple after dinner.
Exercise – 40 minute walk after work. I missed my lunch time walk as work was so frantic.
Kylee – keep up the good work, you are doing so well. I hope you find some yummy yorkshire puds where you live! They are seriously delicious!!
Okay, YUM!!! your meals look great! I am going to have to make your Kitchen Sink lentil soup soon.
Tonight, I am going to try my hand at making orzo with mushroom and peas. Can you believe I have never had orzo?!?! What is wrong with me? lol!
Thanks for the encouragement, your photos are looking more and more professional–love the lighting!
Curious: maybe you have already mentioned this, but what is rocket? Meals look tasty, especially the salad — I have been craving them lately.
Yes Marcia is right, rocket is arugula! It is sooooo yummy!
You know, this is a great idea. I might have to start doing this myself, to be more aware of what I’m doing/eating.
I believe rocket = arugula.
Now to go check out the other participants…
Well I don’t know how it tasted but your pizza looks GORGEOUS!
I must hear more about these raw peanut butter cookies!
Thanks! This weekend while we were planting the garden, I figured out that arugula = rocket, since the labels on the seed catalogs are in multiple languages.
