Today didn’t start off so simple. I tried to go swimming, twice. The first attempt I forgot a crucial item and the second attempt was so filled with children swimming in the adult lanes, jumping on your head. Now I love kids, but I don’t understand why parents allow them into the adult lanes and basically I had to abandon any plans of swimming. Sadly.
Came home & made some breakfast: sausage, beans, homemade bread, an apple. It was yummy!

Followed by lunch several hours later: A roast – I made roast beef, roasted red onions, roasted sweet potato, roast potatoes, roasted parsnips, roasted carrots, peas & cabbage oh and a yummy Yorkshire pudding. It was lovely to have a traditional British Sunday roast!

Evening tea was definitely light, strawberries, a hot chocolate & a laughing cow cheese.

Exercise: a 1 hour walk - the 2 attempts at swimming don’t count ;0)
Get Stuff Done: I cleaned & organized my whole room!

I did well today! Even got some photos up, although my Tom Yum soup looks a bit dodgy. Not sure if my readers are loving seeing everything I eat, but it’s good fun anyhow! Thanks for the inspiration!

I have to ask, what is Yorkshire pudding?
Day 2. Same breakfast, weet-bix with soy milk & yogurt (I always eat the same breakfast). Lunch was, again, egg and lettuce sandwich, as I cooked an extra egg yesterday, plus some grapes. Dinner was a vegie/brown rice/butter beans dish topped with some grated cheese. (With enough leftovers for lunch tomorrow.) And I just had the last of the watermelon. Snacks were an apple, and an apple muffin from a batch I made yesterday.
I would love to go swimming, but our pools are shut for winter. There are a few indoor ones, but they are miles away. I went for a 15 minute walk at lunch time today, and a 40 minute walk when I got home from work.

Everyone is doing so well! Does anyone else find that the weekends are when you fall off the healthy wagon?

I have to admit that I fell off the wagon mid-weekend, FT! I’m about to post about it. But I’m back at it and knowing I’m participating in this challenge is helping me get motivated again.
I LOVE looking at the photos of your food. It looks so good and there’s such a variety. Yum!
Though I don’t have time or access to post everyday, I will look forward to viewing others’ meals and plans each day. What a wonderful idea!

I’m reading a Joyce Meyer book and she said something that has helped – you should be enjoying the adventure when you’re on your way to the if then when bit… lol okay did that make sense? you know what I mean?
Yorkshire puddings…oh, I miss them! I LOOOOOOVE Yorkshire pud!! We used to have the English roast (lamb) on Sundays with all the fixings…
Oh boy…I think I know what I’m going to have to try making in my crockpot. Roast. Veggies. Gravy.
