
This is my new favourite “fast food” recipe I concocted. 2 scallops (I’m working hard to be able to say my taste buds like them ;0) ) on a bed of rocket spinach mix and pomegranate seeds, with warmed beets and grilled goat cheese on top! Delicious and takes about 3-5 minutes to make and oh seconds to polish off!
I may have fallen in love with grilled goat cheese log.

ohh yeah, warm goats cheese on any green is one of my faves. the french have been onto this for milennium!

I’ve gotta know – when you use pomegranates on salads like this, do you eat the seeds or spit them out? If you eat them, do you chew them up or just swallow them whole?
It might sound like a dumb question
but enquiring minds want to know!
Isn’t it something like 25 times you need to eat something before you can say for sure whether you like it or not? Something to do with the pallett getting used to new tastes?

I chew the pomegranates and eat them whole. The seeds are the actual pomegranate flavour.. I don’t get bothered by them at all. They’re like kiwi seeds
I like scallops, but I am not a huge fan of them. I prefer fish or prawns.
That goat cheese warmed on a salad with beets and the pomegranate sounds really good. Maybe you can just eat that and no scallops? Or use shrimp?
That all sounds delicious! I wish I had a good fish market clost by so I could get some scallops.
I have been trying to like beets but I can’t get past the SMELL. How do you do it? It looke delicious!
I’ll eat anything with goat cheese although I do love scallops and that combo has got to be rich!
