I have my mum with me this week and she eats about double what I do, so I set a challenge to feed us both for the week for £20! I ended up spending £21.55! Not bad because I did stock up on brussel sprouts which were on sale as well as cheese and purchased two larger items I’d run out of, mayo and peanut butter. Plus, I had two meals to cook for 4 this week!

What did I buy?
- 1 red onion
- fresh mint
- 2 courgettes (aka zucchini)
- cherry tomatoes
- extra lean mince
- lettuce
- mozzarella
- radishes
- organix tofu
- kiwi fruits
- semi-skimmed milk (normally buy organic, I didn’t read the label as this was with the organic!)
- 2 fairtrade bananas
- gouda cheese slices
- cucumber portion
- spring onions
- organic beetroot
- 1 large carrot
- 4 nectarines
- organic peanut butter
- light mayo
- 2 x FAGE greek yogurt with honey
- brussel sprouts
- red pepper

Day 5 of more protein, low GI, PCOS eating started the day with baked beans, 1/2 a fage with almond butter, blueberries and flaxseeds, water and a Pukka tea.
For lunch and dinner I made the same thing with a couple of changes.
Lunch: Balsamic fruity meetballs with homemade coleslaw (made with brussel spouts, carrots & apple), and mint Bulgar & Feta salad.
Dinner: Balsamic fruity meetballs with Bulgar & Feta salad, peas, radishes, gouda cheese & red pepper!

These meatballs are so yummy & healthy – extra lean mince, courgettes, red pepper, apple and onion in a homemade sauce!
Day 6 saw me start with:

Mango & orange smoothie with protein powder, grapes, light babybel, 1 leftover meatball and a Pukka Love tea! (blurry photo so I made it small!)

Grilled cheese (with gouda cheese, beets and honey mustard!!) sandwich, 2 clementines, homemade hot chocolate – using 1 cup of milk and cocoa powder! Yummy!

Dinner: Salad with lettuce, cherry tomatoes, feta cheese and blueberries with a Fage yogurt!
I’ll be finishing all those FAQ’s today and should have them posted tonight or tomorrow, you sure did ask some good questions! I’ll also send the interview questions to those who wanted to be interviewed, get some awards up & given out AND those recipes! Wow, it will be a busy time.

I’d say you are successful at your challenge – having a guest and spending not much more on grocery is admirable. Plus, your meals look so delicious. Does your mother eat mostly the same kinds of foods that you do?

I’m with the above commenter, can you post the recipe for the meatballs? That dinner looks yummy. You put a lot of things together that I would not of thought of, your meals are very balanced with loads of veg and fruit.

£21 is a very little amount to spend on food for 2 for a week and yet you buy a lot of fruits & veg which so many people think are too expensive. It just show you when you cut out the crappy foods you can actually eat better.
We usually spend about £45 – £50 a week for two people and eat out at least one evening meal a week and usually have a lunch out at the weekends too.

It is true… you are proving that eating healthy is not expensive. When you eat a lot of veggies/vegetarian… it really opens up a new world of creativity cooking. Its wonderful.

Well done! As you obviously enjoy yoghurt – maybe making a batch would help the budget a bit – and you could use half to make a nice simple soft cheese too. Just a thought! Sue.

this could be a peek into my shopping cart except that I don’t eat dairy and bulk up on more fruit and a bit more carbs–a lot of the staples are the same, though. Great post and V. impressive for £21!
