Recipe: Aztec Soup with lime avocado salsa

So, Almost Frugal asked me to share a recipe & link to her great new recipe site. It was very hard deciding which recipe to share, but in the end I decided on one that is perfect for end of the summer evenings!

Aztec Soup

  • Heat 4 tablespoons of olive oil in a pan on medium heat, add 2 chopped onions and a tsp of pepper!
  • Cook for 5-10 minutes, long enough for the onions to be soft, but not burnt or crisp!
  • Add 2 cloves of chopped garlic and 1 teaspoon of chopped chili
  • Add 1 litre of light chicken stock or vegetable stock for the vegetarians
  • Add 1 large chilled not frozen chicken breast which has been chopped into pieces (when I became a vegetarian I started omitting the chicken and adding turnip instead)
  • Cook for 5 – 10 minutes until chicken is fully cooked
  • Add juice of 1/2 lime into soup
  • In a separate bowl mix the following: 4 large spring onions chopped into small pieces, 1 avocado peeled and stone cut into tiny pieces, approx 6 cherry tomatoes cut into 4, juice of 1/2 lime, 1 tsp black pepper, 1-2 tablespoons chopped coriander
  • Put the hot soup into bowls and drop a heaped tablespoon of the fresh lime avocado salsa
  • Serves 4

Serve with Rocket, Beetroot & Feta salad and cheesy scones! Let me know if you want the cheesy scone recipe, they are very yummy!

    The soups sound gorgeous. I’ve put in on my list of ‘recipes to try’. I like to try at least one new recipe a week but the ‘to try’ list is getting so long that I think I’m going to have to up that to two a week.
