Daily Tracking Money and Food – Day 4!

Another no spending day – total 9/20 (almost at the 1/2 way mark!!)

So, today was a bit of a funny day! My work has been plagued with a gastroenteritis bug, with most people being off for 5 days. I smugly thought I had escaped it, but enjoyed 4 full hours of the experience last night. However, I feel as fit as a fiddle now and think I escaped pretty easy compared to my co-workers! And no I don’t think the marmite had anything to do with it!

Food Today:

Breakfast – took it nice and simple with a Food Dr Spelt cracker (plain!) and a glass of water

Lunch – started to feel more “safe” but had another Food Dr Spelt cracker (plain!) and a fresh nectarine cut into slices. Enjoyed with a glass of soy “chocolate” milk!

Snack – more sips of water and grapes

Dinner – made a puy lentil and rice dish that was VERY yummy! I basically put equal parts of puy lentils with brown rice, added 1/2 a courgette/zucchini and about 4 tablespoons of fresh tomato I diced up. I then topped it with 2 tablespoons of balsamic vinegar! On the side I had 2 apricots! Of course some more water too!

So:

Veggies – 2 – courgettes and tomato (technically, yes, tomato is a fruit!)

Fruit – 3 – nectarine, grapes, apricots

Protein – soy milk and those yummy lentils!

Grains – brown rice and 2 crackers

Dairy – the soy milk (decided not to have any cheese today just in case!)

Water – about 5 glasses, need another 3 before bed!

The best thing is I have enough dinner left for lunch @ work tomorrow!!

    Just curious…is your soy milk fortified with calcium and that is why you count it as dairy as soy milk has no dairy in it?

    Hi Tam yes the soy “chocolate” milk is fortified with calcium! I do also try to buy orange juice fortified with calcium when I get the chance!

    I have a couple of soy milk question too.

    Which tastes best for drinking? Sweetened or unsweetened? I’d like to go for unsweetened but I’m trying to get my daughter to drink milk (she never does, unless it’s one of those thick, globby chocolate milkshake things) so taste is important.

    Also, how long does it keep once it’s opened?

    You’re fast becoming my ‘healthy eating’ expert ;)

  4. I don’t think you need to worry about getting your 5 furits and veggies everyday. I like your daily eating, it’s given me some interesting ideas, Wife and i tend to eat to much meat (usually hamburger cassorole)

    I have gotten out of the habit of buying cookies (to a degree anyways) by eating in season fruit. Nothing beats fresh watermelon in summer.

    Hi Sharon, no problem ask away!

    I honestly think it is personal preference. I buy regular soy milk but use it in things like soup, cereal etc. I do also try to only buy soy milk that is calcium fortified so that I am getting my calcium!

    I only buy one a week and usually finish it at the 5 day mark. The brand I buy says “use within 5 days”, but most fresh soy milk have a date on it just like regular milk!

    I’m really enjoying your food posts, I’m planning to change over to some more vegetarian type options for my protein to save costs, any hints for cooking lentils or do you use the tinned one?

    Hi Louise, yes my biggest hint with lentils is to get a variety of types. I buy puy lentils and have some great recipes for them as well as red split lentils for soups and “normal” red and green ones!

    Tinned is a good place to start but more costly and very soon you’ll get the hang of it!
