Well today was another no spending day bringing the total to 8/20!
Food Today:
Breakfast:
1 Dr Food Spelt Cracker (about the size of a piece of bread!) with marmite* and a kiwi on the side!
*note: I don’t like marmite or tofu (which I had last night!) but I eat it because I know it’s good for me and have read time and time again you need to try something 22 times before your taste buds adjust; I have to say it has gotten easier to eat it, but I’m still a LONG way from feeling the love*
Lunch:
Last night I quickly made a basic carrot & lentil soup (1 portion) and brought it to work for lunch today. Enjoyed it with grapes and an apple (had to eat 2 portions of fruit since I had no carbs and would have been hungry!)
Dinner:
Leftover vegetable lasagna (with lots of courgettes!) from the freezer, a large salad made with snow peas & radishes! My “chocolate” soy milk (it’s vegan friendly so made with cocoa rather than chocolate!) and a nectarine!
Water: about 5 glasses so far, need to work on another 3 before bed!
So:
Veggies: Carrots (from the soup!), Courgettes (from lasagna), salad
Fruit: Kiwi, Apple, Grapes, Nectarine
Protein: Lentils (from the soup), Cheese (from the lasagna), soy milk and marmite!
Grains: Cracker
Dairy: Cheese, soy milk,
You know, I notice the days I eat a very varied diet and fill up on fruit I don’t crave for anything!
I’m really glad everyone is enjoying these food diaries and I hope not finding them too boring! It’s been really interesting to actually “see” what I eat and where I could make some positive changes!
As asked for by the wonderful Sharon, here is the lemon vinaigrette recipe I make (totally made up!)
Lemon Vinaigrettte Dressing for 1 person’s side salad:
1 tablespoon of juice from a lemon mixed with 1 tablespoon extra virgin olive oil and 1 tsp sugar (some people might want a tad more) it’s tangy and oh sooooo yummy on a salad!


I can’t believe how healthily you eat – I think my daily diet would shock you! It is getting better though!
Marmite is one of my all time favourite food groups. I’m just lucky that it’s actually full of B vitamins or I’d have no excuse.
As a matter of interest did you ever eat it as a kid? I don’t know anyone that started eating it as an adult, and it would take a lot of courage to teach yourself to like it – it’s certainly got a distinctive taste.
My Life Makeover Journey – I do try to eat as healthy as possible but don’t think I always achieve it. I’m sure there’s more I could do, would like to get a dietition to look @ my current diaries and see what they say. I’ve done it before with surprising results but could do with an update.
Plonkee – No, the first time I tried it I was 24 or 25 years old!!! I agree I’ve never met anyone who was able to grow to like/love it as an adult, maybe I’ll be able to change that, eventually!

i love cooking & eating, haha, so i have some portion control mechanisms in place. i think your food seems delicious, healthy, and like you are very good with portions. you are such an example
so funny about marmite – my boyfriend is australian, and one day he was eating toast with vegemite. i was complaining about being hungry, so he offered me his toast.
i had maybe 5 bites and then noticed him staring at me. so i said – “oh, did you want it back? i thought you gave it to me to finish”. and he said he was wondering if i was trying to prove something by eating all of it.
apparently, he gave it to me as a joke, because vegemite tastes gross. i loved it, haha. it reminds me of nutritional yeast. yum.
so. there you go. your first adult who actually likes having not grown up on it.
wait – i should add a disclaimer. i lived in the UK as a small child and likely had some marmite then (though not a lot as my parents wouldn’t eat it). so there could potentially be some lingering taste buds from back then.
Laughing about the marmite, you either love it or hate it, luckily I love it, in fact we buy it in bulk from costco. I have just started to keep a food diary again as it helps me to keep an eye on my cfs symptoms and check what I have or haven’t consumed each day.

Other than that I love your post. The idea of having Marmite 22 times in my life sends shivers down my spine (and I like plenty of English things!). I’m totally into your food posts and am adding my own after I finish this!
Oh I had to Google marmite! I don’t know anyone here who eats it.

I heard it was seventeen times. Antony Worrell Thompson said so on the telly yesterday, anyway. In fact, I’m writing a post about that very subject right now so it’ll be up later.

marmite and tofu both need to be used/cooked in a certain way, or they’re yucky
marmite – best spread thinly (scraped on) buttered toast, or for a healthier option rice cakes. Put it on as thinly as you possibly can, and the butter/marge helps soften the taste down.
tofu – have you tried freezing it? with lots of experimentation and research i’ve found the best way (for me) to cook it is to drain/press it, freeze, defrost when you want it, press again, marinate if possible (I always forget). The freezing makes it chewier, and puts air bubbles in it… completely changes the texture
