Frugal easy to make soup!

As per Rob in Madrid’s request, I’m sharing my soup recipe. This is one of the easiest soups I’ve ever made. Using organic ingredients I was able to make a large batch for £1.25 = $2.50 and it gave 6 very generous portions. If I’d of had it with bread, it could have stretched to 8 portions.You can also double the batch and have wonderful soup ready for those nights you don’t have the time or energy to cook! Finally, I’ve also added courgettes/zucchini and red pepper (chopped very finely) and to compensate another cup of water when I wanted a bigger batch.

  • 3-4 tablespoons of extra virgin olive oil
  • 2 onions chopped
  • 4 large carrots chopped
  • 2 leeks chopped
  • 2 celery stalks chopped
  • 500 g red split lentils
  • 4 pints of water
  • 1 tbsp yogurt to serve on each bowl
  • Lemon Juice (juice from 1 lemon)
  • Seasoning

Heat the oil in a large frying pan and cook all the veg stirring often for 20 min. Add the lentils and water. Bring to the boil and simmer for 20 minutes. Remove from heat and roughly blend the soup, adding seasoning to taste and lemon juice.

I serve it with a dollop of yogurt on top and a shake of parsley.

Served with

homemade french bread or rolls or crackers, cheese and an apple or grapes

Or

Spinach or rocket salad with raddishes and grapes

  1. This sounds great. I think what makes it sound most interesting to me is blending it- it must give it a really nice texture. I bet it would taste great with a fresh green salad.

    If I have it for dinner, I forgot to say I often have it with spinach or rocket salad 0- with grapes and raddishes! It is yummy!

    Thanks, I was always taught to soak lentils overnight (note they really really expand). I’ve never cooked lentils without soaking.

    I have a similar recipe made with a bit of meat, I’ll post it this weekend

    Rob most lentils I use I simply rinse. This recipe doesn’t say it, but always follow the directions for lentils on the package.

    I would suggest adding a bit of beef base, it’s my Wife’s secret ingredient, it adds a ton of flavour. Also I’ll post my lentil soup recipe to my blog today, got it from my Mother in Law and I love it.
